Homemade Housewife Recipes (Vegetarian) Part 2

I decided to start this new blog post to showcase more of my homemade recipes, now. I won't promote it until I've added 30 new recipes, but I don't want to get behind.


I posted part 1 with about 30 delicious, homemade recipes, and it took so long to gather the images. I want to delete many images from my phone, and I've already uploaded my most recent recipe photos to a permanent folder.


Here's where I left off from my part 1. Please check back in a month or 2, and by then; I should have uploaded another 30 or so new recipes! Thanks for the support.

I used a leftover omelet made at an Indian food truck the day before, added the rice & veggies, and fresh strawberries.




Homemade Vegetable Broth


This was my 1st time making homemade vegetable broth! I didn't realize we ran out of it, and I was determined to male some homemade Pasta E Fagioli.


I drained the juice after cooking it an hour and a half, or so; then I saved the veggies to go along with rice, because my husband loves it!







Pasta E Fagioli


I used the homemade vegetable broth made to make some Italian Pasta E Fagioli. It's super, super delicious and delicious!

Tomato sauce, Italian seasoning, black pepper, red onion, green bell pepper, pasta, tomatoes, kidney beans, Northern beans, carrots, celery, garlic cloves.


My husband loves this as much as he loves my homemade Mediterranean soup. This took longer, because I had to make the vegetable both from scratch.


Making the vegetable both & this soup took about 3 hours total! Well worth the effort, and time! Was my 1st time making Pasta E Fagioli.


I made enough to last well over a week! I also put some in a freezer container to make as a meal prep for future use!





Vegetarian Lasagna


My 1st time making vegetarian lasagna! I've probably only made lasagna once before this, and I used ground beef.


I made this with plant-based, Beyond Beef. Sour cream, cream cheese, shredded cheese, feta cheese, white onion, green onions, spinach, spaghetti sauce, whole wheat lasagna noodles, sriracha.


This took awhile to layer. I cooked the plant-based meat wigh onions, and pasta separately; then layered everything in a skillet, and let it simmer on a burner. Probably 2 hours total until done.


The 1st layer was sauce with the plant-based meat. 2nd layer was the lasagna noodles. 3rd layer was the sour cream, cream cheese & green onions, 4th layer was the shredded cheese. Then repeat.


Husband, and I both loved it. Plenty of leftovers, and I'll freeze some as a meal prep. Great to serve with bread, and or a salad.
















Cheese Pizza Turned Delicious


Took a regular cheese 🧀 pizza 🍕, with a rising crust, and add veggies! Half of the pizza I added honey ham to, for me. The other half was vegetarian for my husband.

Bell Peppers & Apple Cider Vinegar


Ingredients:


Red bell peppers

Italian seasoning

Extra virgin olive oil

Black pepper

Organic apple cider vinegar

Light brown sugar

"Red peppers contain a large amount of vitamin C, which heals and rejuvenates tissues, including cartilage,” Whitson explains. “Research suggests that vitamin C helps reduce pain from knee arthritis. Red peppers also contain anti-inflammatory compounds, which could also help relieve OA symptoms.”

Extra virgin olive oil

Why drink olive oil in the morning?

Black pepper

All 3 of these fruits & veggies are loaded with so many nutrients. I love the taste of them all. I ate the carrots 🥕 last, but I ate the bananas 🍌, and kiwi 🥝 together!

I actually prefer to cook carrots within a recipe, but raw carrots are the best way to consume all the nutrients they possess. Apparently kiwi, bananas, and carrots are all considered a "Super Food".


I don't really like eating a banana all by itself, but I love a delicious fruit salad with bananas added. I remember my Mother always having a huge bowl of raw vegetables in our kitchen, when I was growing up, and bananas were always included.


Kiwi 🥝 is so tasty all by themselves, or in a yummy fruit salad. I think I'll add some to plain yogurt for breakfast. I'm definitely going to eat them, daily, to lower my blood pressure.

I have some huge fresh of the vine avocados 🥑, and yesterday we had one with shredded cheese, salsa & white corn tortilla chips. It's definitely one of my favorite snacks. I could eat it, every single day. Quick & easy to make, too.


We recently bought a little watermelon 🍉, and cantaloupe. I'll wait a few more days for them both to get ripe. Just like avocados 🥑, they both are packed with vitamins, and other essential nutrients! I love them both, as well.


We also bought some beet juice, and pomegranate juice, both combined with other juices. I'd rather drink beet juice than to eat them. They will help lower blood pressure, and that's my goal for drinking it.


It always amazes, and puzzles me when I find out someone doesn't like any kinds of fruits! Same with vegetables! There's only a million different kinds, with a variety of different tastes.


Personally, I'd much rather eat raw fruits & veggies, or cook different recipes with my favorite ones; than to take vitamin supplements. So many fresh fruits & veggies can directly help with your digestive system.


I have enough kiwi 🥝 to eat a few, every day for at least a week or more! It's been so long since I had them, and I forgot how delicious they are; especially when juicy!

Made a nice fruit salad, yesterday. This is just half of it, and there's enough to last a few days more!

Omg, yesss! Now this was one of the most delicious vegetarian meals I've ever cooked for my husband, and myself!


This is what I call "restaurant style cuisine". It was soooo yummy, I can't fully express how tasty it was, and soooo healthy, too!

Homemade Mediterranean Soup & Organic Rice

Ingredients to this delicious homemade Mediterranean soup recipe:


Vegetable Broth

Celery

White Onion

Red Bell Pepper

Garlic Cloves

Carrots

This is actually a different version of my homemade Mediterranean soup. Normally, I don't add mushrooms or carrots. I started incorporating organic rice, because my husband kept adding it to the soup.


So now, I basically have 3 different delicious versions of my original recipe. It takes a few hours for the soup, itself, to prepare & cook. Once it's ready, then you can add pasta noodles, or rice.


Also, it'll last a week if you make a big enough pot. You can add more both, as needed, after a few days; but don't necessarily need to add additional veggies or spices.


My Mediterranean soup recipe is packed with vitamins, nutrients, and flavor. Out of the 3 homemade soups I, now, make on a regular basis; apparently the Mediterranean soup is my husband all-time favorite!
