Homemade Vegetarian Sushi Rolls!
My 1st time making these vegetarian style. They came out almost perfect, and were delicious! It was my husband's 1st time eating seaweed & sushi. I do believe he enjoyed them!
I've been actively researching, and cooking a variety of healthy, delicious vegetarian recipes for us the past 3 months. I love trying out new recipes, especially healthy ones that taste yummy!
My ultimate goal in being a homemaker, as far as cooking; is to always cook things that will produce health benefits for our bodies! It's well worth the effort in researching, and the time it takes to make nutritious dishes.
We sincerely care so much about each other's overall health, and prove it on a DAILY BASIS! I love the role of being a housewife, especially the responsibility, and element of cooking! Cooking homemade meals that are utterly delicious, plus are healthy; is something I take pride in, and absolutely love doing for loved ones!
I was just telling my Mother, yesterday, that I undoubtedly feel blessed to be able to buy healthy ingredients, and have the opportunity to make any kind of foods I want for my husband, and myself! She agreed we are blessed!
Seaweed has tremendous health benefits, and obviously vegetables do, too! I think it's super fun to tryout new dishes, and see my husband's reaction to them! Cooking us such a huge passion of mine!

"Technically a fruit, red peppers are more common as a staple in the vegetable produce section. They're also an excellent source of vitamins A and C. Each half cup of raw red pepper provides you with 47 percent of your daily recommended intake of vitamin A and 159 percent of your vitamin C."
"A single cup of chopped red pepper provides a whopping 190mg of vitamin C - almost three times more than an orange. And, while green and yellow varieties contain less than their red counterpart, at 120mg, they still provide 200 per cent of your RDA."
Coconut/Jasmine Rice
"Coconut has been lauded as a health elixir of sorts. Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous."
"Coconut rice not only offers a delicious taste but also offers many health benefits. It's high in healthy fats, particularly medium-chain fatty acids, that are easily absorbed and used by the body for energy. These fats also help increase feelings of fullness and may aid in weight loss."
"It's rich in selenium and manganese, which help fight cancer cells and promote overall health. Jasmine rice also has naturally occurring oils, which help to lower cholesterol and diabetes. And its antioxidant properties score equally with foods such as blueberries and other fruits."
